Production Notes: Cold soaked for 5 days and then primary fermentation was started, which took 8 days. Punched down twice daily by hand. In medium-toast American (80%) and French (20%) oak for 17 months. 50% new oak and 50% neutral.
Winemaker's Notes: Sourced from Janes Vineyard in Mendocino County, our 2006 Sangiovese reflects true Tuscan attributes, yet retains the just picked freshness attributed to the cooler climate of Mendocino County. From the Medium/Light color and gentle cherry-tinged fruit to the generous acidity. which works so well with Italian cuisine this Sangiovese reveals Black cherry, spice, cinnamon slight cola, a liitle tobacco flavors, producing a wonderfully balanced fruit-to-alcohol finish. Released on August 1, 2008, J. Keverson's Sangiovese will travel well to your coastal retreat, ready to accompany a steaming bowl of ciopinno or even Friday night staples of spaghetti or calzone. We've found that its herbal edge enhances dishes with fresh cut tyme, basil, fennel and sage. On the bocce court, friends will love it with cheeses such as gorgonzola and cambozola and hard-to-pair artichoke or asparagus. Enjoy with friends now or cellar through 2012.

Production Notes: The Pinot grapes were picked on October 3rd 2006. The grapes were destemed, partial crushed, and then cold soak for 4 days, followed by an additional 7 days of fermentation. The wine was pressed and went directly to the barrels without any settling. The wine was aged for 9 months in 40% new french oak then bottled aged for 7 months.
Winemakers Notes: Sourced from Labryrinth Vineyard in Russian River Valley, J. Keverson's 2006 Pinot Noir presents a clear, light body; medium-red to slight-brick in color. The wine leads off with soft red fruit, black cherry, cola, cinnamon, slight green aromas. Soft mouthfeel, clean with medium acidity, full of cherry and cola flavors. Beautiful texture on the tongue and mouth on the finish. Released on February 25, 2008, our Pinot Noir lives up to this varietal's reputation as a wonderful food wine. Pair it with just about any poultry, fish or veggie dish, and you'll be extremely pleased. This wine drinks extremely well now, however it will continue to evolve in the bottle over the next 6-12 months. Cellar through 2012.

Production Notes:The Chardonnay Grapes were picked on October 9 early so the grapes are cold while they are being destemmed and pressed. After the grapes were pressed the juice was allowed to settle for 24 hours in a stailess steel tank. The juice was then put into french oak barrels (25% new oak, 75% nutral) and primary fermentation was started, lasting 23 days. The weather was cold and it took longer than expected. The wine went through 100% malic fermentation. The lees were left in the barrel and was stirred once a month, for 9 months. The wine then was put into a stainless steel tank for cold stabilazation. Bottled on August 13.
Tasting Notes at release date: Appearance: Medium gold, yellow, clear, medium density. Aroma: Citrus, pineapple, lemon, some butter/oak/toast. Full aromas are nicely integrated. Taste: Green apple, citrus, pineapple, ripe flavors. Big, lush, round mid palate. Integrated oak, good acidity. Overall, a big, varietal chardonnay with ripe tropical fruit (pineapple), citrus character, and integrated oak, good acidity. Delicious!
